Step 1 – Sautée the onion and garlic in oil until soft and translucent on high heat.
Step 2 – Add the turmeric, cumin powder, black pepper 1 cinnamon stick, few peppercorns and cardamon. let them bubble in the oil with the onions and garlic for a few seconds (20-30 seconds)
Step 3 – Add the rice and stir it all together until well incorporated for a few minutes (2min) mixing frequently
Step 4 – Add the chicken or broth of your choice. I usually like meat broths. Mix well and bring to boil until the broth has decreased but with still broth left over in the pot.
Rule: for each cup of rice you add 2 cups of water/broth
Step 5 – Cover your pot and lower the heat to the lowest level. Let it simmer for 10-15 minutes. Please follow the instructions on your rice packaging
